Abstrak. Analisis kinerja rantai pasok halal kopi Arabika Gayo di Kabupaten Aceh Tengah dilakukan dengan pendekatan deskriptif-kuantitatif melalui observasi dan wawancara terhadap pelaku rantai pasok, termasuk pemilik usaha, pekerja, dan pemasok. Penelitian ini mengembangkan Key Performance Indicator (KPI) berbasis masukan auditor LPPOM-MPU Aceh, kemudian melakukan pembobotan indikator menggunakan Analytical Hierarchy Process (AHP) untuk mengukur tingkat kinerja serta mengidentifikasi titik lemah dalam rantai pasok halal. Hasil penelitian menunjukkan bahwa secara umum, kinerja rantai pasok halal kopi Arabika Gayo berada pada kategori "Good" hingga "Excellent" dengan skor 90,58–94,82, mencerminkan pemenuhan standar halal dalam sertifikasi, bahan baku, dan kebersihan fasilitas produksi. Namun, terdapat kelemahan dalam efisiensi waktu produksi dan distribusi, ketepatan pengiriman, serta penggunaan Alat Pelindung Diri (APD). Untuk meningkatkan kinerja, diperlukan optimalisasi manajemen waktu pada tahap produksi dan distribusi guna memastikan keberlanjutan rantai pasok halal yang memadukan aspek syariah, kesehatan, dan keamanan produk.

Abstract. This study evaluates the performance of the halal supply chain in certified halal Arabica coffee industries in Aceh Tengah Regency, Aceh, using a descriptive-quantitative approach through observation and interviews with supply chain actors, including business owners, workers, and suppliers. The research develops Key Performance Indicators (KPIs) based on input from LPPOM-MPU Aceh auditors, followed by weighting the indicators using the Analytical Hierarchy Process (AHP) to measure performance levels and identify weaknesses in the halal supply chain. The results indicate that, overall, the performance of the Gayo Arabica coffee halal supply chain falls under the "Good" to "Excellent" category, with scores ranging from 90.58 to 94.82, reflecting compliance with halal standards in certification, raw materials, and production facility hygiene. However, weaknesses were found in production and distribution time efficiency, delivery accuracy, and the use of Personal Protective Equipment (PPE). To enhance performance, optimizing time management in production and distribution stages is necessary to ensure a sustainable halal supply chain that integrates sharia compliance, health, and product safety aspects.
