RINGKASAN
Manajemen Risiko adalah proses mengidentifikasi, menganalisis, mengevaluasi, mengendalikan, dan berusaha menghindari atau meminimalkan risiko yang tidak dapat diterima. Pengelolaan risiko bertujuan untuk meningkatkan nilai perusahaan dalam menghadapi masalah organisasi secara komprehensif. Tujuan dari penulisan Tugas Akhir ini ialah untuk mengetahui risiko apa saja yang dihadapi pada aktivitas produksi produk Coffee Chips dan mengetahui bagaimana manajemen risiko/pengendalian risiko pada produksi produk Coffee Chips.
Lokasi Tugas Akhir ini dilaksanakan di Banda Aceh, Jl. Diponogoro, No 14, Kecamatan Baiturrahman, Kampung baru. Objek dan Ruang lingkup Tugas Akhir ini ialah tentang pengolahan bubuk kopi dengan campuran bahan baku lainnya menjadi produk Keripik Kopi (Coffee Chips) dan bagaimana manajemen risiko terhadap risiko yang dihadapi pada produksi produk Coffee Chips. Adapun metode yang digunakan dalam penulisan Tugas Akhir ini adalah metode observasi yaitu pengamatan langsng terhadap objek yang diteliti
Berdasarkan hasil pengamatan diperoleh bahwa risiko yang dihadapi pada produksi produk Keripik Kopi (Coffee Chips) meliputi, risiko bahan baku, yaitu harga bahan baku yang tidak menentu dan kualitas mutu. Risiko proses produksi, yaitu ukuran ketebalan/ketipisan adonan yang tidak sesuai, pemotongan keripik yang tidak sesuai, dan hasil penggorengan yang tidak sesuai. Risiko pemasaran, yaitu tidak mencapai target penjualan dan keripik hancur. Setiap risiko dilakukan manajemen identifikasi atau pengendalian terhadap risko yang dihadapi.

ABSTRACT Risk Management On The Production Activity Of TheCoffee Chips Risk Management is the process of identifying, analyzing, evaluating, controlling, and trying to avoid or minimize unacceptable risks. Risk management aims to increase the value of the company in dealing with organizational problems comprehensively. The purpose of writing this Final Project is to find out what risks are faced in the production of Coffee Chips products and to know how to manage risk/risk control in the production of Coffee Chips products. The location of this final project is in Banda Aceh, Jl. Diponogoro, No. 14, Baiturrahman District, KampungBaru. The object and scope of this final project is about processing coffee grounds with a mixture of other raw materials into coffee chips and how to manage the risks faced in the production of coffee chips. The method used in writing this final project is the observation method, namely direct observation of the object under study. Based on observations, it is found that the risks faced in the production of Coffee Chips include raw material risks, namely the uncertain price of raw materials and quality. The risk of the production process, namely the size of the thickness / thinness of the dough that is not suitable, cutting chips that are not suitable, and the results of frying are not suitable. Marketing risk, namely not achieving sales targets and chips being destroyed. Each risk management identification or control of the risks faced.
