ABSTRAK

UD Sarigut Bakery adalah salah satu industri pengolahan roti yang memproduksi roti dengan pemasaran meliputi Jantho, Meulaboh, dan Sigli. UD Sarigut Bakery merupakan salah satu pemasok kebutuhan roti yang bergerak secara berkelanjutan di Banda Aceh. Pada proses produksi, mesin bread line menjadi salah satu mesin yang sangat berperan penting dalam proses produksi di UD Sarigut Bakery karena mesin ini yang akan mencetak adonan roti sebelum dilanjutkan keproses selanjutnya seperti pemanggangan ataupun penggorengan. Pada proses pencetakan adonan roti di mesin bread line masih mengalami downtime yang disebabkan oleh komponen mesin yang tidak bekerja secara maksimal seperti tekanan pada mesin yang berkurang dan adanya beberapa baut atau mur yang kurang pelumas atau dalam keadaan longgar. Maka perlu dilakukan evaluasi dan perbaikan untuk meningkatkan produktivitas perusahaan. Penelitian ini dilakukan untuk mengetahui nilai Overall Equipment Effectiveness (OEE) mesin bread line di UD Sarigut Bakery selama 3 bulan dilanjutkan dengan analisis six big losses yang terjadi. Nilai rata-rata OEE yang diperoleh adalah sebesar 87 % dan losses terbesar yang diperoleh adalah pada reduced speed sebesar 5%. Losses terjadi karena pengaruh breakdown dan deffect saat proses pencetakan. Sebagai dasar rekomendasi perbaikan dilakukan dengan pendekatan 8 pilar Total Productive Maintenance (TPM) dengan tujuan meminimalisasi dan menghilangkan losses yang terjadi. Salah satu dari rekomendasi perbaikan dengan pendekatan 8 pilar Total Productive Maintenance (TPM) adalah Autonomous Maintenance dengan membuat prosedur maintenance dan laporan dari hasil perawatan.

ABSTRACK UD Sarigut Bakery is one of the bread processing industries that produces bread with marketing covering Jantho, Meulaboh, and Sigli. UD Sarigut Bakery is one of the suppliers of bread needs that moves sustainably in Banda Aceh. In the production process, the bread line machine is one of the machines that plays an important role in the production process at UD Sarigut Bakery because this machine will print the bread dough before proceeding to the next process such as baking or frying. In the process of molding bread dough on the bread line machine, there is still downtime caused by machine components that do not work optimally, such as reduced engine pressure and the presence of several bolts or nuts that lack lubrication or are loose. So it is necessary to evaluate and improve to increase the productivity of the company. This research was conducted to determine the Overall Equipment Effectiveness (OEE) value of the bread line machine at UD Sarigut Bakery for 3 months followed by an analysis of the six big losses that occurred. The average value of OEE obtained is 87 % and the largest losses obtained are at reduced speed of 5%. Losses occur due to the influence of breakdown and defects during the printing process. As a basis for recommendations for improvement, the 8 pillars of TPM (Total Productive Maintenance) approach is carried out with the aim of minimizing and eliminating losses that occur. One of the recommendations for improvement with an 8-pillar TPM approach is Autonomous Maintenance by making maintenance procedures and reports of maintenance results.
