Produksi perikanan di laut Aceh memiliki peranan yang sangat penting dalam&#13;
industri pengolahan ikan. Di samping untuk memanfaatkan ikan yang tidak laku&#13;
dijual atau ikan yang kurang digemari masyarakat, produksi hasil perikanan juga&#13;
dapat dijadikan suatu inovasi baru dalam bidang industri pengolahan ikan.&#13;
Ketersediaan bahan baku di suatu industri sangat dibutuhkan untuk mengantisipasi&#13;
kekurangan suplai bahan baku pada saat tidak musim ikan guna terjaminnya&#13;
keberlangsungan suatu usaha. Tujuan penelitian ini untuk mengidentifikasi jenis&#13;
bahan baku industri dan mengetahui jumlah kebutuhan bahan baku yang diperlukan&#13;
oleh industri pengolah ikan (skala mikro) di kota Banda Aceh. Penelitian ini&#13;
menggunakan metode survei dan wawancara. Jumlah responden ditentukan secara&#13;
purposive sampling yang terdiri dari 18 industri yang terdapat di kota Banda Aceh.&#13;
Analisis kebutuhan bahan baku industri pengolahan ikan dilakukan secara deskriptif&#13;
kuantitatif. Hasil penelitian menunjukkan bahwa terdapat tiga jenis ikan dominan&#13;
yang dijadikan bahan baku pengolahan ikan diantaranya yaitu ikan tongkol, ikan&#13;
kambing-kambing, dan tuna yang dijadikan olahan seperti ikan kayu, bakso ikan,&#13;
nugget ikan, dendeng ikan, dan abon ikan, dari ketiga bahan baku tersebut memiliki&#13;
jumlah yang bervariasi dari tahun ke tahun dimana jumlah kebutuhan bahan baku&#13;
ikan tongkol tertinggi pada tahun 2018 sebesar 383.750 kg, untuk ikan kambingkambing&#13;
pada&#13;
tahun&#13;
&#13;
2016 terjadi kekurangan stok sebesar 54.582 kg dan untuk ikan&#13;
tuna terpenuhi setiap tahunnya dengan kebutuhan bahan baku tertinggi pada tahun&#13;
2015 sebesar 9.000 kg. Jenis ikan yang paling banyak diolah yaitu ikan tongkol&#13;
sekitar 66% yang digunakan sebagai bahan baku dalam pembuatan ikan kayu,&#13;
sedangkan 2% dalam pembuatan dendeng ikan yang menggunakan bahan baku ikan&#13;
kambing-kambing.&#13;

ABSTRACT &#13;
Fisheries production in Aceh Sea has a very important role in the fish processing&#13;
industry. The fisheries production not only used to utilize the unsold fish or the less&#13;
popular one in the community, but also as a new innovation in the field of fish&#13;
processing industry. The availability of raw materials in an industry is needed to&#13;
anticipate the lack of raw material supply during non-fish season in order to ensure&#13;
the sustainability of a business. The purpose of this study was to identify the types of&#13;
industrial raw materials and determine the amount of raw material requirements&#13;
needed by the fish processing industry (micro scale) in the city of Banda Aceh. This&#13;
research used survey and interview methods. The number of respondents was&#13;
determined by purposive sampling consisting of 18 industries in the city of Banda&#13;
Aceh. Analysis of the needs of raw materials for fish processing industry was carried&#13;
out in a quantitative descriptive method. The results of the study showed that there&#13;
were three dominant types of fish which were used as raw material for processing&#13;
fish including little tuna, goatfish, and tuna which were processed such as dried tuna&#13;
(keumamah), fish meatballs, fish nuggets, fish jerky, and shredded fish. From the&#13;
three raw materials, the numbers were varied from year to year where the highest&#13;
number of raw materials needs for tuna in 2018 was 383,750 kg, for goats in 2016&#13;
there was a stock shortage of 54,582 kg and tuna fish was fulfilled every year with&#13;
the highest raw material needs in 2015 at 9,000 kg. The most processed type of fish&#13;
was little tuna about 66% which was used as raw material in making dried tuna,&#13;
while 2% in making jerky fish using raw materials of goatfish. &#13;
