Penelitian mengenai pembuatan sensor optik pH dari ekstrak metanol ubi ungu&#13;
(Ipomoea batatas L.) berbasis membran pektin telah dilakukan. Ubi jalar ungu&#13;
(Ipomoea batatas L.) diekstraksi dengan cara maserasi menggunakan pelarut&#13;
metanol menghasilkan ekstrak metanol dengan konsentrasi antosianin 1,735&#13;
mg/L. Selanjutnya zat aktif antosianin dianalisis fitokimia dan di Karakterisasi&#13;
menggunakan Fourier Transform Infrared (FTIR). Sensor optik pH berbasis&#13;
matriks membran pektin memiliki sensitivitas tertinggi 0,01% pada buffer fosfat&#13;
konsentrasi 0,01 M. Hasil uji reprodusibilitas terhadap 10 sensor menunjukkan&#13;
nilai standar deviasi sebesar 0,033 dan nilai persen standar deviasi relatif (%RSD)&#13;
sekitar 5,11%. Waktu respon sensor adalah 5 menit. Sensor menujukkan respon&#13;
stabil sampai hari keempat dan telah diaplikasikan untuk memantau kesegaran&#13;
ikan mujair (Oreochromis mossambica) selama 48 jam.&#13;

ABSTRACT&#13;
Research on the manufacturing of pH optical sensor using methanol extract of&#13;
sweet potato (Ipomoea batatas L.) based on pectin membrane matrix has been&#13;
done. Sweet potato (Ipomoea batatas L.) extracted by using maceration technique&#13;
with methanol solvent resulting in methanol extract with 1.735 mg/L anthocyanin&#13;
concentration. Then, the anthocyanin active substance is phytochemical analyzed&#13;
and characterized using Fourier Transform Infrared (FTIR). The pH optical&#13;
sensor based on pectin membrane matrix have the highest sensitivity of 0.01 % on&#13;
phosphate buffer 0.01 M. Reproducibility result of 10 sensors indicate the&#13;
standard deviation value of 0.033 and relative standard deviation percentage&#13;
(%RSD) around 5.11 %. Sensor response time is 5 minutes. Sensors show stable&#13;
response until fourth day and have been applied to monitor the freshness of mujair&#13;
fish (Oreochromis mossambica) for 48 hours.&#13;
