ABSTRAK Prarancangan pabrik soygurt ini menggunakan metode fermentasi asam laktat homofermentatif dengan bahan baku kacang kedelai. Kacang kedelai diperoleh dari perkebunan di dekat areal pabrik dan diproses menjadi susu kedelai terlebih dahulu dan menjadi soygurt. Kapasitas produksi pabrik ini adalah 12.500 Ton/Tahun dengan hari kerja 330 hari/tahun. Bentuk perusahaan yang direncanakan adalah Perseroan Terbatas (PT) dengan menggunakan metode struktur garis dan staf. Kebutuhan tenaga kerja untuk menjalankan perusahaan ini berjumlah 150 orang. Lokasi pabrik direncanakan didirikan di Gampong Sawang, Kecamatan Peudada, Bireuen, dengan luas tanah 26.400 m2. Sumber air pabrik ini berasal dari Sungai Krueng Bugeng, Kecamatan Peudada, Bireuen dengan total kebutuhan air sebesar 9.660,35 kg/jam, serta untuk memenuhi kebutuhan listrik sebesar 1,28 MW diperoleh dari generator diesel. Hasil analisa ekonomi yang diperoleh adalah sebagai berikut : 1. Fixed Capital Investment = Rp 145.617.020.792 2. Working Capital Investment = Rp 36.404.255.198 3. Total Capital Investment = Rp 182.021.275.990 4. Total Biaya Produksi = Rp 54.409.181.535 5. Hasil Penjualan = Rp 125.000.000.000 6. Laba Bersih = Rp 60.002.195.695 7. IRR (Internal Rate of Return) = 30 % 8. BEP (Break Even Point) = 28,1 % 9. POT (Pay Out Time) = 2 tahun 4 bulan ABSTRACT The preliminary design of soygurt plant provided is using homofermentatif lactic acid fermentation method with soybean as raw material. Soybean is obtained from plantation near factory areal and processed into soy milk first and become soygurt. The production capacity of this plant is 12.500 ton/year with work days of 330 days/year. The form of this company is Limited Liability Company (Ltd) and using structur of line and staff method, with total of manpower 150 people. Water demand of this factory is supplied from Krueng Bugeng river in Bireuen with total water demand of 9.660,35 kg/hour, and electricity demand is fully supplied by diesel generator with power of 1,28 MW.
