Penentuan kadar formaldehid dalam ikan kerapu cantang (Epinephelus sp) pada variasi penyimpanan suhu kamar telah dilakukan. Ekstraksi pada penelitian ini dilakukan dengan menggunakan pelarut asam trikloro asetat (TCA) melalui proses  maserasi dengan menggunakan bantuan shaker. Variasi waktu penyimpanan pada suhu kamar dilakukan selama 0, 10, 12, 14, 16 dan 18 jam. Pengamatan dilakukan terhadap kadar formaldehid yang terbentuk dari proses pembusukan dari berbagai perlakuan (buang perut dan tidak buang perut) berdasarkan variasi penyimpanan. Hasil pengamatan menunjukkan bahwa kadar formaldehid tertinggi diperoleh pada penyimpanan 18 jam sebesar 45,80 ppm untuk sampel buang perut dan sampel tidak buang perut sebesar 52,22 ppm. Hasil menunjukkan bahwa kadar formaldehid pada sampel tidak buang perut lebih tinggi dibandingkan dengan kadar formaldehid pada sampel buang perut. Berdasarkan data statistik yang diperoleh maka dapat dilihat bahwa adanya perbedaan nyata antara kadar formaldehid yang diperoleh terhadap lamanya penyimpanan ikan sehingga Ho ditolak dan H1 diterima..&#13;

Determination of formaldehyde of in cantang grouper (Epinephelus sp) in the room temperature storage has been done.  In this research, extraction was done by trichloro acetic acid (TCA) maceration of shaking process. Storage time variation in room temperature was done 0, 10, 12, 14, 16 and 18 hours. Observations was done towards formaldehyde levels  that forming decay process of various treatments (wasting stomach and non-wasting stomach) based on stronge variation. The results showed that formaldehyde higher levels obtained during in 18 hours storage at 45.80 ppm for wasting stomach and non-wasting stomach  at 52.22 ppm. Results showed that formaldehyde levels in wasting stomach is higher that non-wasting stomach. Based on statistical data, it showed that there are significant differences between formaldehyde levels which was obtained against fish stronge length so Ho refused and H1 accepted.&#13;
