Response Surface Methodology (RSM) digunakan pada optimasi kondisi ekstraksi gelatin dari tulang dan kulit ikan leubim hitam (Chanthidermis maculata). Perlakuan pendahuluan dengan variasi konsentrasi alkali dan asam serta suhu pada proses ekstraksi merupakan factor perlakuan pada penelitian ini. Hasil gelatin dievaluasi pada respon rendemen. Kondisi ekstraksi untuk mendapatkan rendemen yang optimum pada ekstraksi gelatin adalah pada konsentrasi pretreatment alkali 0.55 N NaOH dan konsentrasi pretreatment asam 1.05 N HCl pada suhu ekstraksi 60oC. Diprediksikan pada kondisi tersebut akan menghasilkan rendemen 14.00 %.&#13;

ABSTRACT&#13;
Response Surface Methodology (RSM) was used to determine the optimum conditions for extracting the gelatin from spotted oceanic triggerfish bone and skin. Pretreatments with different alkali and acid concentrations, and extraction temperatures ware the factors treatment in this study. The resultant fish gelatins were evaluated in terms of extraction yield.  The optimal condition for maximum yield ware at 0.55 N NaOH for the alkali concentration, and 1.05 N HCl for the acid concentration of pretreatments  with 60 oC extraction temperature. The predicted response  for this extraction condition was that the yield will be 14.00 %.&#13;
