ANALISIS BIAYA PRODUKSI DAN PENDAPATAN USAHA KUKUR SANTAN KELAPA PADA “UD. PERAS SANTAN MURNI KENTAL” DI PASAR PEUNAYONG KOTA BANDA ACEH

ABSTRAK


Santan kelapa merupakan air perahan dari kelapa tua yang dikukur. Santan mempunyai rasa lemak dan digunakan sebagai perasa yang menyedapkan masakan, yang fungsinya belum dapat digantikan oleh bahan lain karena citra dan aroma yang ditimbulkan sangat khas, sehingga akan mempengaruhi citra masakan yang diolah penelitian dilakukan secara studi kasus (Case Study), yaitu pada UD. Peras Santan Murni Kental di Pasar Peunayong Kota Banda Aceh. Objek penelitian adalah usaha kukur santan kelapa pada UD. Peras Santan Murni Kental di Pasar Peunayong. Ruang lingkup penelitian terbatas pada masalah analisis biaya produksi dan pendapatan usaha kukur kelapa tersebut. Hasil penelitian menunjukkan bahwa pendapatan UD. Peras Santan Murni Kental di Pasar Peunayoung Kota Banda Aceh sebesar Rp 11,124,250 per bulan. Dengan biaya operasional atau biaya tidak tetap sebesar Rp 29,317,000 per bulan. R/C Ratio usaha ini adalah 1.33 yang mengartikan usaha ini layak untuk dijalankan.

ABSTRACT


Coconut milk is juice from old coconut measured. Coconut milk have a sense of fats and used as flavorings that stabilize cuisine, whose function can not be replaced by other materials because its image and caused very distinctive aroma, so it will affect the image of the cuisine proccessed study conducted a case study (Case Study), which is at UD. Peras Santan Murni Kental in Peunayoung’s Market. The object of this research is a business of Kukur Santan Kelapa Peunayoung’s Market. The scope of research is limited on the analysis problem toward production costs and revenues of the Kukur Kelapa. The result showed that the income is Rp 11,124,250 per month. With operating costs or variable costs of Rp 29,317,000 per month. R/C ratio is 1.33 businesses that define the business is feasible to run.
