ABSTRACT&#13;
&#13;
Quail meat contains high protein and so we need to investigate more deeply to the content of bioactive components that exist on quail meat. Research has been conducted at the Laboratory of Meat Processing Science and Technology Faculty of Agriculture and Animal Husbandry Department of Basic Chemistry Laboratory of the Faculty of Mathematics and Natural Sciences UNSYIAH. The research took place from 15 March 2015 until August 20, 2015. In reviewing the bioactive components contained in this quail meat using maceration method. The results showed that the positive quail meat are alkaloid compounds. While steroid compounds, saponins and flavonoids showed negative results.&#13;

Daging puyuh mengandung protein yang tinggi sehingga dibutuhkan untuk meneliti lebih dalam terhadap kandungan komponen bioaktif yang ada pada daging puyuh. Penelitian telah dilaksanakan di Laboratorium Ilmu dan Teknologi Pengolahan Daging Jurusan Peternakan Fakultas Pertanian dan Laboratorium Kimia Dasar Fakultas Matematika dan Ilmu Pengetahuan Alam Universitas Syiah Kuala. Penelitian berlangsung dari tanggal 15 maret 2015 sampai 20 Agustus 2015. Dalam mengkaji komponen bioaktif yang terkandung dalam daging puyuh ini menggunakan metode maserasi. Hasil penelitian menunjukkan bahwa pada daging puyuh positif terdapat senyawa alkaloid. Sedangkan senyawa steroid, saponin dan flavonoid menunjukkan hasil yang negatif.&#13;
