Sapi aceh merupakan salah satu sumber daya genetik lokal Indonesia yang masih harus dikembangkan sebagai sumber protein hewani dengan kandungan nutrisi yang baik. Salah satu nutrisi pada daging sapi yaitu asam amino. Penelitian ini bertujuan untuk mengetahui dan membandingkan kandungan asam amino pada daging sapi aceh yang berasal dari otot iliopsoas dan gracilis. Penelitian ini merupakan penelitian observasional menggunakan 6 sampel daging yang berasal dari otot iliopsoas dan gracilis dari tiga ekor sapi aceh jantan dewasa. Pengambilan sampel menggunakan metode non-probability sampling. Analisis kandungan asam amino menggunakan metode high performance liquid chromatography (HPLC). Hasil penelitian menunjukkan bahwa daging sapi aceh mengandung 18 jenis asam amino baik pada otot ilipsoas maupun gracilis dengan kadar yang berbeda yang terdiri atas leusin, Lysine, Isoleucine, Methyonine, Valine, Arginine, Alanine, Glicyne, Glutamic Acid, Cystine, Proline, Tryptophan, Threonine, PhenylAlaninee, histidin, Aspartic Acid, Serine, dan Tyrosine. Secara statistik, tidak ditemukan perbedaan signifikan (P>0,05) kandungan asam amino antar kedua jenis otot. Kesimpulan dari penelitian ini adalah jenis otot tidak memengaruhi jenis dan kadar asam amino pada daging sapi aceh.

ABSTRACT Aceh cattle are one of Indonesia's local genetic resources that still need to be developed as a source of animal protein with good nutritional content. One of the nutrients in beef are amino acids. This study aims to determine and compare the amino acid content in aceh beef derived from iliopsoas and gracilis muscles. This research is an observational study using 6 meat samples from the iliopsoas and gracilis muscles of three aceh bulls. Sampling used non-probability sampling method. Analysis of amino acid content using the hight performance liquid chromatography (HPLC) method. The results showed that aceh beef contains 18 types of amino acids in both ilipsoas and gracilis muscles with different levels conCystineg of leucine, lysine, isoleucine, methionine, Valinee, Argininee, Alaninee, glycine, glutamic acid, cystine, Prolinee, tryptophan, threonine, phenylAlaninee, Histidine, aspartic acid, Serinee, and tyrosine. By Statistically, there was no significant difference (P>0.05) in amino acid content between the two muscle types. amino acid content between the two muscle types.
