Survey quality the starch production small industrial in the province of north sumatra agung a. rahman1, m. ikhsan sulaiman2, eti indarti2 1students of the faculty of agriculture syiah kuala university–banda aceh 2staff of the department of agricultural technology syiah kuala university–banda aceh abstract this study aims to investigate quality of tapioca flours produced by bigand home scale industriesin north sumatra province based on the sni no. 3451-2011. the tapioca flours produced by the big or home scale industries did not meet the sni with an exception of starch content. starch content of the flours was around 82%. the moisture of the flours was higher than the standard. tapioca flour of ud. delisari murni had the highest moisture content followed by ud. sudono 14.43%, pt. sinar intan and pt. sari tani with a value of 15.51%, 14.43% and 14.27%, respectively. crude fiber of the flours ranged between 0.382% and 0.594%, where the product of ud delisari murni was the highest and pt. sari tani range was the lowest. the acidity of the tapioca flours also did not meet the standard of the tapioca institute of america (tia) as well as the iso standards. all of the flours contained high number of e. coli indicating bad sanitation and hygiene during processing of the flours.
