Umbi janeng (dioscorea hispida dennst.) merupakan sumber pangan alternatif yang banyak dijumpai di aceh, namun pemanfaatannya masih terbatas karena mengandung hidrogen sianida (hcn) yang bersifat toksik sehingga memerlukan proses detoksifikasi sebelum dikonsumsi. pengolahan janeng oleh masyarakat umumnya masih dilakukan secara tradisional melalui perendaman dalam air mengalir yang membutuhkan waktu relatif lama. oleh karena itu, dikembangkan mesin pembuang racun janeng untuk meningkatkan efisiensi proses detoksifikasi. pengujian kinerja mesin perlu dilakukan untuk mengetahui kemampuan mesin dalam menurunkan kadar hcn serta mengevaluasi kapasitas tabung, konsumsi energi listrik, kebutuhan air, dan kelayakan ekonominya. penelitian ini bertujuan untuk menguji kinerja mesin pembuang racun janeng dalam menurunkan kadar hcn serta menganalisis kapasitas tabung, konsumsi energi listrik, konsumsi air, dan kelayakan ekonomi mesin. penelitian dilakukan menggunakan variasi waktu pengadukan 2 jam, 2,5 jam, dan 3 jam dengan dua kali ulangan. analisis kadar hcn dilakukan menggunakan metode argentometri. hasil penelitian menunjukkan bahwa mesin mampu beroperasi sesuai fungsi yang dirancang dengan sistem pengadukan dan pembilasan kontinu. kadar hcn janeng menurun dari 60 ppm pada sampel awal menjadi 50 ppm setelah perendaman garam, kemudian menjadi 45 ppm pada pengadukan 2 jam, 43 ppm pada 2,5 jam, dan mencapai nilai terendah 41,5 ppm pada pengadukan 3 jam. persentase penurunan kadar hcn tertinggi sebesar 30,83% diperoleh pada waktu pengadukan 3 jam, meskipun nilai tersebut masih berada di atas batas aman konsumsi sebesar 10 ppm. kapasitas tabung mesin sebesar 36,62 kg per proses. konsumsi energi listrik meningkat seiring bertambahnya waktu pengadukan dengan nilai tertinggi 0,823 kwh pada pengadukan 3 jam, sedangkan konsumsi air masing-masing sebesar 1.260 liter, 1.575 liter, dan 1.890 liter. hasil analisis ekonomi menunjukkan biaya pokok sebesar rp414,85/kg, nilai break even point (bep) sebesar 1.031,11 kg, dan payback period (pp) selama 3,82 bulan. berdasarkan hasil tersebut, mesin pembuang racun janeng layak digunakan dari aspek ekonomi, namun masih memerlukan pengembangan lebih lanjut untuk menghasilkan kadar hcn yang memenuhi standar keamanan pangan

Abstract
Janeng tuber (Dioscorea hispida Dennst.) is an alternative food source widely found in Aceh. However, its utilization remains limited due to the presence of hydrogen cyanide (HCN), a toxic compound that requires detoxification before consumption. Traditionally, janeng is processed by soaking it in running water, a method that requires a relatively long processing time. Therefore, a janeng detoxification machine was developed to improve the efficiency of the detoxification process. Performance testing of the machine is necessary to determine its effectiveness in reducing HCN levels and to evaluate its tank capacity, electrical energy consumption, water consumption, and economic feasibility. This study aimed to evaluate the performance of the janeng detoxification machine in reducing HCN levels and to analyze its tank capacity, electrical energy consumption, water consumption, and economic feasibility. The experiment was conducted using three stirring-time treatments: 2 hours, 2.5 hours, and 3 hours, each with two replications. HCN analysis was carried out using the argentometric method. The results showed that the machine operated according to its intended design through a continuous stirring and rinsing system. The HCN content of janeng decreased from 60 ppm in the initial sample to 50 ppm after salt soaking, then further decreased to 45 ppm after 2 hours of stirring, 43 ppm after 2.5 hours, and reached the lowest value of 41.5 ppm after 3 hours of stirring. The highest percentage reduction in HCN content, 30.83%, was achieved at the 3-hour stirring time, although this value remained above the safe consumption limit of 10 ppm. The machine tank capacity was 36.62 kg per batch. Electrical energy consumption increased with stirring time, reaching the highest value of 0.823 kWh at 3 hours of stirring, while water consumption was 1,260 liters, 1,575 liters, and 1,890 liters, respectively. Economic analysis showed a production cost of IDR 414.85/kg, a Break-Even Point (BEP) of 1,031.11 kg, and a Payback Period (PP) of 3.82 months. Based on these results, the janeng detoxification machine is economically feasible; however, further development is required to achieve HCN levels that comply with food safety standards.
