Telah dilakukan penelitian tentang kesegaran mutu ikan cakalang di pasar rukoh, banda aceh, sebagai pasar tradisional yang penting bagi perekonomian masyarakat setempat. latar belakang penelitian ini didasarkan pada fluktuasi produksi ikan cakalang di provinsi aceh yang dipengaruhi oleh kondisi perairan dan regulasi perikanan, serta masalah penanganan pascapanen yang kurang optimal seperti penggunaan es dan sanitasi yang dapat menurunkan mutu ikan. tujuan penelitian ini adalah untuk mengetahui cara pedagang menangani hasil tangkapan dan menilai mutu ikan melalui uji organoleptik. penanganan hasil tangkapan dilakukan melalui observasi, kuesioner wawancara, dokumentasi dan mengambil sampel 30 ekor ikan cakalang untuk uji organoleptik oleh 30 panelis berdasarkan parameter mata, insang, lendir, daging, bau, dan tekstur. hasil penelitian menunjukkan bahwa penanganan ikan cakalang di pasar rukoh telah dilakukan dengan cukup baik melalui penerapan prinsip c3q (clean, cold, careful, dan quick), sehingga kesegaran dan mutu ikan dapat dipertahankan hingga sampai ke konsumen. dan nilai uji organoleptik dengan skor 8,0 menandakan mutu ikan dalam kategori baik dan sesuai standar. temuan ini menunjukkan bahwa penerapan prinsip c3q berperan penting dalam menjaga mutu ikan cakalang di pasar tradisional dan berpotensi mendukung keberlanjutan ekonomi perikanan lokal. kata kunci: ikan segar, penanganan pascapanen, uji organoleptik, prinsip c3q, mutu ikan segar



Abstract

A study on the freshness quality of skipjack tuna (Katsuwonus pelamis) at Rukoh Market, Banda Aceh, was conducted. Rukoh Market is a traditional market that plays an important role in supporting the local community’s economy. The background of this study was based on fluctuations in skipjack tuna production in Aceh Province, which are influenced by marine environmental conditions and fisheries regulations, as well as suboptimal post-harvest handling practices, such as inadequate use of ice and poor sanitation, which may lead to a decline in fish quality. The objective of this study was to examine fish handling practices applied by traders and to assess the quality of skipjack tuna through organoleptic evaluation. Fish handling practices were assessed through observation, questionnaire-based interviews, and documentation, while a total of 30 skipjack tuna samples were evaluated organoleptically by 30 panelists based on eye, gill, mucus, flesh, odor, and texture parameters. The results showed that the handling of skipjack tuna at Rukoh Market was generally conducted well through the implementation of the C3Q principles (Clean, Cold, Careful, and Quick), allowing the freshness and quality of the fish to be maintained until reaching consumers. The organoleptic evaluation yielded an average score of 8.0, indicating that the fish quality was categorized as good and met the applicable standards. These findings indicate that the implementation of C3Q principles plays an important role in maintaining the quality of skipjack tuna in traditional markets and has the potential to support the sustainability of the local fisheries economy.
