Penelitian ini bertujuan untuk menganalisis pengaruh jenis kemasan dan suhu penyimpanan terhadap karakteristik fisikokimia manisan belimbing wuluh menggunakan metode principal component analysis (pca) dan linear discriminant analysis (lda). perlakuan yang diuji meliputi tiga jenis kemasan (vakum, polipropilen, dan edible film) serta dua suhu penyimpanan (ruang 26°c dan dingin 10°c). parameter yang dianalisis mencakup kadar air, vitamin c, ph, dan total padatan terlarut (tpt). hasil menunjukkan adanya peningkatan kadar air dan penurunan vitamin c, ph, dan tpt selama penyimpanan. pca mengidentifikasi bahwa kemasan vakum memberikan pengaruh dominan terhadap perubahan karakteristik fisikokimia dengan kontribusi variasi data mencapai 95%. sementara itu, analisis lda menghasilkan akurasi klasifikasi sebesar 94,12%, dengan edible film sebagai kemasan yang paling konsisten menjaga kualitas manisan. oleh karena itu, edible film direkomendasikan sebagai alternatif kemasan yang efektif untuk mempertahankan mutu manisan belimbing wuluh selama penyimpanan.



Abstract

This study aims to analyze the effect of packaging type and storage temperature on the physicochemical characteristics of candied starfruit using the Principal Component Analysis (PCA) and Linear Discriminant Analysis (LDA) methods. The treatments tested included three types of packaging (vacuum, polypropylene, and edible film) and two storage temperatures (room 26°C and cold 10°C). The parameters analyzed included water content, vitamin C, pH, and total dissolved solids (TPT). The results showed an increase in water content and a decrease in vitamin C, pH, and TPT during storage. PCA identified that vacuum packaging had a dominant effect on changes in physicochemical characteristics with a contribution of data variation reaching 95%. Meanwhile, the LDA analysis produced a classification accuracy of 94.12%, with edible film as the most consistent packaging in maintaining the quality of the candied starfruit. Therefore, edible film is recommended as an effective packaging alternative to maintain the quality of candied starfruit during storage.
