Kasus pemalsuan daging halal menggunakan daging babi telah banyak terjadi di indonesia, termasuk di aceh, provinsi dengan mayoritas muslim terbesar. penelitian ini bertujuan untuk mengevaluasi kelayakan penggunaan laser-induced breakdown spectroscopy (libs) yang dikombinasikan dengan principal component analysis (pca) dan partial least squares (pls) untuk mengidentifikasi sampel daging sapi, kerbau, kambing, ayam, dan babi, serta dendeng sapi (bersertifikat halal dan tanpa sertifikat halal) dan dendeng babi di aceh. penelitian ini juga menganalisis pemalsuan daging sapi, kambing, kerbau, dan ayam menggunakan babi. sampel dikumpulkan dari berbagai sumber dan dianalisis menggunakan libs, metode pca digunakan untuk membedakan jenis daging secara kualitatif dan pls menganalisis pemalsuan daging secara kuantitatif. libs secara efektif mengidentifikasi jenis daging di aceh berdasarkan komposisi unsur, sementara pca berhasil membedakan sampel daging. pls mencapai akurasi tinggi (r2> 0.99) dalam mendeteksi pemalsuan daging sapi, kerbau, kambing, dan ayam dengan nilai lod (2.65%, 4.69%, 2.38%, dan 3.41%) dan loq (8.08%, 14.23%, 7.23%, dan 10.34%). hasil ini secara signifikan meningkatkan pengembangan metode cepat dan akurat yang penting untuk keamanan halal, terutama dalam mendeteksi pemalsuan daging di aceh.



Abstract

Cases of halal meat adulteration using pork have been prevalent in Indonesia, including in Aceh, the province with the largest muslim majority. This study aims to evaluate the feasibility of using Laser-Induced Breakdown Spectroscopy (LIBS) combined with Principal Component Analysis (PCA) and Partial Least Squares (PLS) to identify samples of beef, mutton, buffen, chicken, and pork, as well as beef jerky (both halal-certified and non-halal-certified) and pork jerky in Aceh. The study also analyzes the adulteration of beef, mutton, buffen, and chicken using pork. Samples were collected from various sources and analyzed using LIBS. The PCA method was used to qualitatively distinguish meat types, and PLS was used to quantitatively analyze meat adulteration. LIBS effectively identified meat types in Aceh based on elemental compositions, while PCA successfully differentiated meat samples. PLS achieved high accuracy (R2 > 0.99) in detecting adulteration in beef, mutton, buffen, and chicken with LOD values (2.65%, 4.69%, 2.38%, and 3.41%) and LOQ values (8.08%, 14.23%, 7.23%, and 10.34%). These results significantly enhance rapid and accurate methods that are crucial for halal food safety, especially in detecting meat adulteration in Aceh.
