Aceh merupakan salah satu daerah penghasil jahe merah di indonesia. jahe merah adalah rempah yang masa simpannya tidak terlalu lama dan cepat mengalami pembusukan. pembuatan jahe merah kering merupakan salah satu upaya peningkatan masa simpan dan meningkatkan harga jual jahe merah. tujuan dari penelitian ini adalah mengetahui pengaruh metode perlakuan awal terhadap lama waktu pengeringan jahe merah. penelitian dilakukan dengan lima variasi metode perlakuan awal yaitu metode pengeringan secara konvensional, metode pengeringan secara utuh, metode pengeringan dengan pengirisan 2mm, metode pengeringan dengan perlakuan pengukusan dan metode pengeringan dengan perlakuan dihaluskan (diblender). hasil dari penelitian menunjukkan bahwa metode pengeringan dengan perlakuan dihaluskan (diblender) hanya memerlukan waktu pengeringan selama 4 jam untuk mencapai kadar air dibawah 20% dari massa awal jahe merah yaitu 500gr.

Aceh is one of the red ginger producing areas in Indonesia. Red ginger is a spice that has a short shelf life and quickly decomposes. The manufacture of dried red ginger is one of the efforts to increase the shelf life and increase the selling price of red ginger. The purpose of this study was to determine the effect of the pre-treatment method on the drying time of red ginger. The research was carried out with five variations of the pre-treatment method, namely the conventional drying method, the whole drying method, the drying method with 2mm slices, the drying method with steam treatment and the drying method with blended treatment. The results of the study show that the drying method with the blended treatment only requires 4 hours of drying time to reach a moisture content below 20% of the initial mass of red ginger, namely 500gr.
