Cumi-cumi merupakan produk laut yang banyak terdapat di perairan indonesia. sebagian besar cumi diolah menjadi bahan makanan protein tinggi. cumi-cumi memiliki sifat mudah mengalami penurunan mutu sehingga perlu dilakukan pengolahan agar cita rasanya tidak berkurang. kecamatan leupung merupakan lokasi penghasil produk olahan asal hewan laut yang berada di kabupaten aceh besar yang menjual produk olahan cumi-cumi kering. penelitian ini bertujuan mengidentifikasi penggunaan formalin sebagai bahan pengawet pada cumi kering yang dijual di kawasan kecamatan leupung kabupaten aceh besar. sampel berjumlah 10 kemasan dari pedagang di kecamatan leupung dan diperiksa menggunakan metode spot test. data hasil penelitian disajikan secara deskriptif dan tabulasi. berdasarkan hasil pemeriksaan dengan metode spot test pada seluruh sampel 1 sampai sampel 10 tidak ditemukan mengandung formalin. hasil penelitian menunjukkan bahwa tidak ditemukan cumi-cumi kering yang mengandung formalin. kesimpulan dari penelitian ini, cumi-cumi kering yang dijual di kecamatan leupung kabupaten aceh besar tidak mengandung formalin. kata kunci: cumi-cumi kering, formalin, leupung



Abstract

Squid is a marine product that is widely found in Indonesian waters. Most squid is processed into high protein foodstuffs. Squid has the property of being easily degraded in quality so that it needs to be processed so that the taste does not decrease. Leupung Subdistrict is a location for producing processed products from marine animals located in Aceh Besar Regency that sells processed dried squid products. This study aims to identify the use of formalin as a preservative in dried squid sold in the Leupung sub-district of Aceh Besar regency. Samples totaled 10 packages from traders in Leupung sub-district and were examined using the spot test method. The data from the study are presented descriptively and tabulationly. Based on the results of the examination with the spot test method, all samples 1 to 10 were not found to contain formalin. The results showed that no dried squid containing formalin was found. The conclusion of this study, dried squid sold in Leupung sub-district, Aceh Besar regency, does not contain formalin. Keyword: dried squid, formaldehyde, Leupung
