Kerang lentera (lingula sp.) atau sering disebut baree oleh masyarakat aceh merupakan organisme yang termasuk ke dalam filum brachiopoda. beberapa penelitian telah dilakukan pada baree (lingula sp.), seperti pola pertumbuhan, kelimpahan, hubungan panjang-berat dan lain-lain. tujuan utama dari penelitian ini adalah untuk menentukan kandungan gizi baree (lingula sp.) seperti kadar air, abu, lemak, protein, serat kasar dan karbohidrat. pengambilan sampel dalam penelitian ini menggunakan metode purposive sampling dimana sampel diambil dengan pertimbangan tertentu. sedangkan analisis proksimat mengacu pada sni 01.2891.1992 dengan 3 kali pengulangan, sedangkan untuk kandungan karbohidrat menggunakan metode by difference. bagian tubuh yang dianalisa adalah daging baree (lingula sp.). hasil penelitian ini diharapkan dapat menentukan apakah baree (lingula sp.) memiliki kandungan gizi yang cukup untuk dikonsumsi masyarakat. hasil penelitian menunjukkan bahwa daging baree (lingula sp.) dari deah raya kecamatan syiah kuala banda aceh mengandung 76,81±0,53% air, 2,4±0,22% abu, 1,22±0,65% lemak, 13,13±3,82% protein, 1,21±0,07% serat kasar, dan 5,23±4,87% karbohidrat. daging baree (lingula sp.) didominasi oleh kandungan air dan paling sedikit kandungan serat kasarnya. kata kunci: baree (lingula sp.), purposive sampling, kandungan gizi, proksimat, by difference



Abstract

Lantern shells (Lingula sp.) or often called baree by Acehnese people are organisms that belong to the brachiopod phylum. Several studies have been carried out on baree (Lingula sp.), such as growth patterns, abundance, length-weight relationships and others. The main objective of this study was to determine the nutritional content of baree (Lingula sp.) such as moisture, ash, fat, protein, crude fiber and carbohydrates. Sampling in this study used a purposive sampling method where samples were taken with certain considerations. The proximate analysis referred to SNI 01.2891.1992 with 3 repetitions, while for carbohydrate content used the by difference method. The analyzed part of the body was the flesh of the baree (Lingula sp.). The results of this study were expected to determine whether baree (Lingula sp.) contains sufficient nutrients for public consumption. The results of this study showed that baree meat (Lingula sp.) from Deah Raya, Syiah Kuala District, Banda Aceh contains 76.81 ± 0.53% water, 2.4 ± 0.22% ash, 1.22 ± 0. 65% fat, 13.13±3.82% protein, 1.21±0.07% crude fiber, and 5.23±4.87% carbohydrates.
