Alat pendeteksi warna telah dirancang untuk mengukur kadar capsaicin dalam saus. alat ini menggunakan sistem instrumentasi sensor warna tcs3200 sebagai pendeteksi warna, mikrokomputer arduino uno sebagai pengkondisi dan pemproses sinyal dengan bantuan software program integrated development environment (ide). hasil pengukuran sensor warna akan dibandingkan dengan metode standar spektrofotometer ultra violet visible (uv-vis). sampel dipreparasi menggunakan magnetic stirrer dan filtrat diambil. teknik pengambilan sampel secara acak yaitu diambil 8 (delapan) sampel saus yang beredar di kota banda aceh. hasil analisis menunjukkan bahwa kadar capsaicin mengunakan sensor warna tcs3200 berkisar antara 5,39-22,42 mg/l dan menggunakan spektrofotometer uv-vis berkisar antara 5,58-22,64 mg/l. linearitas diperoleh pada rentang konsentrasi 5-25 mg/l menunjukkan kurva kalibrasi linear menggunakan sensor warna tcs3200 (r2= 0,9961) dan spektofotometer uv-vis (r2= 0,9973). akurasi (% recovery) menggunakan sensor warna tcs3200 berkisar antara 98,94-106,63%, dan spektofotometer uv-vis berkisar antara 98,1-110,2%. simpangan baku relatif (% rsd) intraday dan interday tidak lebih dari 2%. berdasarkan perhitungan uji t dapat menunjukkan bahwa pengukuran sensor warna tcs3200 tidak memiliki perbedaan dengan pengukuran spektrofotometer uv-vis. kata kunci: sensor warna tcs3200, arduino uno, capsaicin, spektrofotometer uv-vis, saus, software ide



Abstract

A color detector has been designed to measure the capsaicin level in sauces. This system is designed using a TCS2300 color sensor as an input, Arduino Uno microcomputer as a signal conditioning and signal processing units with Integrated Development Environment (IDE) software. The measurement result will be compared with the standart Ultra Violet Visible (UV-Vis) spectrophotometer instrument. Samples ware prepared using a magnetic stirrer and the filtrate was taken. The random sampling technique, namely 8 (eight) samples of sauces from the market in the city of Banda Aceh. As the result showed that the levels of capsaicin using the TCS3200 color sensor and UV-Vis spectrophotometer ranged from 5.39 to 22.42 mg/L and 5.58 to 22.64 mg/L, respectively. The linearity obtained in the concentration range of 5-25 mg/L shows a linear calibration curve with a using the TCS3200 color sensor (R2= 0.9961) and UV-Vis Spectrophotometer (R2= 0.9973). Accuracy (% recovery) for the TCS3200 color sensor and UV-Vis spectrophotometer were ranged from 98.94 to 106.63%, and 98.13 to 110.2% mg/L, respectively. In case of intraday and interday relative standard deviation has not more than 2%. Based on the t test asessment shows that the TCS3200 color sensor has relative no differences in results with UV-Vis Spectrophotometer.
