Histopatologi jantung dan otak besar tikus putih (rattus norvegicus) akibat pemberian minyak jelantah abstrak penelitian ini bertujuan mempelajari gambaran histopatologi jantung dan otak besar tikus putih (rattus norvegicus) akibat pemberian minyak jelantah 3x, 6x, dan 9x penggorengan. penelitian ini menggunakan 20 ekor tikus putih (rattus norvegicus) jantan dengan berat badan ±300 g. tikus dikelompokkan menjadi 4 kelompok perlakuan (a, b, c, d) dan diadaptasikan selama satu minggu, pemberian pakan dan minum secara ad libitum. minggu kedua sampai minggu ke delapan tikus diberi minyak jelantah per oral setiap hari dengan dosis 1 ml. kelompok a tikus diberi minyak goreng curah (kontrol negatif). kelompok b, c, dan d diberikan minyak jelantah 3x, 6x, dan 9x penggorengan. hari ke 60 tikus dieutanasia, kemudian dinekropsi. diambil organ jantung dan otak besar untuk selanjutnya dilakukan proses pembuatan preparat histopatologi dan diwarnai dengan hematoksilin dan eosin (h&e). parameter yang diamati pada jantung adalah gambaran hiperemi, hemoragi, degenerasi, nekrosis, sedangkan pada otak besar yang diamati nekrosis sel neuron. data pengamatan dianalisis secara deskriptif dengan sistem skoring. hasil pemeriksaan dikelompokkan dalam 3 kategori yaitu, ringan (+), sedang (++), dan berat (+++). hasil penelitian pada jantung terlihat peningkatan jumlah hiperemi, hemoragi, degenerasi, nekrosis, sedangkan pada otak besar nekrosis sel neuron. kesimpulan, ada pengaruh frekuensi penggorengan minyak jelantah 3x, 6x dan 9x terhadap perubahan pada jantung dan pada otak besar. histopathological of rat heart and big brain (rattus norvegicus due to given cooking oil abstract the aim of this research was to learn the histopathological study of heart and big brain of rat fed of cooking oil 3 times, 6 times, and 9 times of fried. twenty rats weighing ±300 g were used in this sudy. the rats were divided into 4 groups (a, b, c, d) and were adapted for a week. on the 2nd week until 8th week, the rats were given 1 ml cooking oil everyday by oral (ad libitum). group a was negative control and was given bulk oil. group b, c, and d were given cooking oil (3 times, 6 times, 9 times of fried). on the 60th day, the rats were euthanasia, heart and big brain were collected and processed to histopathological slide. the histopathological slides were stained with haematoxylin eosin (he). the parameter of heart was hyperemia, hemorrhage, degeneration, cardiac necrosis and on big brain was necrosis of neuronal cell. the data was analyzed descriptively with scoring system. the result was grouped into 3 categories mild (+), moderate (++), and weight (+++). the result showed that on heart increased count of hyperemia, hemorrhage, degeneration, necrosis and on big brain there was necrosis of neuronal cell. the conclusion of this reserach is the cooking oil (3 times, 6 times, 9 times of fried) effect on heart and big brain.
